Su textura es l\u00edquida y se sirve muy fr\u00edo, a veces incluso en vaso, como si fuera un refresco. En cambio, el <strong>salmorejo<\/strong> es m\u00e1s espeso y contundente. Su receta se basa en tomate, pan del d\u00eda anterior, ajo y mucho aceite de oliva virgen extra. Suele servirse con huevo duro y jam\u00f3n picado por encima.<\/p>\n<p data-start=\"1089\" data-end=\"1424\">Ambos platos tienen <strong>ra\u00edces humildes<\/strong>, nacidos en el campo, entre jornaleros y campesinos que necesitaban comidas nutritivas y f\u00e1ciles de preparar. Con el tiempo, estas sopas se han convertido en embajadoras gastron\u00f3micas de Andaluc\u00eda. Hoy en d\u00eda, es f\u00e1cil encontrarlas en cartas de restaurantes de todo el pa\u00eds e incluso del extranjero.<\/p>\n<p data-start=\"1426\" data-end=\"1661\">Pero m\u00e1s all\u00e1 del sabor, el gazpacho y el salmorejo tambi\u00e9n son cultura: aparecen en canciones populares, festivales y hasta en concursos gastron\u00f3micos. \u00bfSab\u00edas que en C\u00f3rdoba se celebra cada a\u00f1o un campeonato de salmorejo tradicional?<\/p>\n<p data-start=\"1663\" data-end=\"2100\">Adem\u00e1s, existen otras <strong>variantes de gazpacho<\/strong> en diferentes regiones de Espa\u00f1a. Por ejemplo, el gazpacho extreme\u00f1o, tambi\u00e9n conocido como <em data-start=\"1799\" data-end=\"1815\">carajamandanga<\/em>, es m\u00e1s espeso y puede incluir huevo cocido, uvas o almendras. El gazpacho manchego, por su parte, es un guiso caliente con carne de caza y pan \u00e1cimo, t\u00edpico de La Mancha. Tambi\u00e9n hay versiones modernas con frutas como sand\u00eda, fresas o mel\u00f3n, que aportan un toque dulce y refrescante.<\/p>\n<h3 data-start=\"2102\" data-end=\"2139\"><strong data-start=\"2106\" data-end=\"2139\">Colores que cuentan historias<\/strong><\/h3>\n<p data-start=\"2141\" data-end=\"2407\">Los colores tambi\u00e9n ayudan a distinguir estas recetas. El <strong>gazpacho andaluz<\/strong> suele tener un color rojo vivo o anaranjado, seg\u00fan el tipo de tomate y la cantidad de pimiento. Si los tomates son muy maduros, el tono ser\u00e1 m\u00e1s intenso. Esta sopa entra primero por los ojos.<\/p>\n<p data-start=\"2409\" data-end=\"2571\">El salmorejo, al llevar m\u00e1s pan y aceite, tiene un color m\u00e1s claro, entre anaranjado suave y rosado. Su textura espesa y su tono cremoso lo hacen muy reconocible.<\/p>\n<p data-start=\"2573\" data-end=\"2880\">En <strong>Extremadura<\/strong>, el gazpacho tradicional puede tener un tono m\u00e1s oscuro debido al uso de piment\u00f3n, lo que lo diferencia claramente del andaluz. Por su parte, las <strong>versiones modernas<\/strong> con frutas tambi\u00e9n tienen colores \u00fanicos: el gazpacho de sand\u00eda, por ejemplo, es m\u00e1s rosado; el de mel\u00f3n, casi amarillo p\u00e1lido.<\/p>\n<p data-start=\"2882\" data-end=\"2984\">Renovar el paladar con estas recetas frescas y llenas de historia es casi una tradici\u00f3n del verano espa\u00f1ol.
